The Perfect Glazed Ham
(Chef Nathan Vasquez-NV Cafe & Catering)

Ingredients
10 to 12 lb spiral ham
2 (8 ounce) cans of pineapple slices in syrup
4 cups water
2 cups maple syrup
½ cup brown sugar
4 tablespoons honey
4 tablespoons butter


Preheat oven to 420 degrees
Poke the ham with a fork. Place the pineapple slices on the ham, securing with toothpicks. Place the ham in a baking dish with the water.
In a saucepan over low heat, melt the butter and mix in the syrup, brown sugar and honey until heated through. Pour half the mixture over the ham.
Bake the ham (uncovered) for 35 minutes in the preheated oven. Pull ham out and cover with foil then place it back into the oven at 375 degrees for 2 hours.
Finally remove the ham from oven and drain the pan drippings into the saucepan with the other half of the mixture. Over medium heat cook and stir until thickened. Serve with the ham!

Grilled New York
With Shallot & Red Wine sauce

(from Chef Nathan Vasquez-NV Cafe & Catering)

4 Shallots (sliced in thin rings)
4 Tablespoons Olive oil
1 Cup red wine
1 Cup beef broth
Salt and freshly ground black pepper
1 (10oz) New York Steak
1 Tablespoon cold butter (in small chunks)

In a medium saucepan over medium-high heat, sauté the shallots in 2 tablespoons of the olive oil until lightly caramelized, about 5 to 7 minutes. Raise the heat to high and add the red wine and reduce by half. Add the broth and reduce by half. Check for seasoning and season with salt and pepper, to taste. Keep warm on low heat.

Brush the steak on both sides with 2 tablespoons of the olive oil and season with salt and pepper. Place on the center of grill and sear for 5 to 8 minutes per side for rare to medium rare, testing by pressing the meat with a finger. The spongier the meat feels, the rarer it is cooked. Remove from the grill and allow to rest, very loosely tent with aluminum foil, 5 to 10 minutes to allow the juices to reabsorb into the meat. Finish the sauce by whisking in the chunks of cold butter, plate your steak and serve some of the sauce on top (serve the rest on the side). Enjoy!

Grilled Portobello Mushrooms with Tomatoes & Fresh mozzarella
(Chef Nate-NV Cafe & Catering)

3 tablespoons olive oil, plus extra for greasing grill pan
4 large Portobello mushrooms
Salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil
2 cloves garlic, minced
3 small to medium sized vine ripened tomatoes, cut into ½ inch pieces
8 ounces fresh water-packed mozzarella, drained and cut into ½ inch cubes
¼ cup chopped fresh basil leaves
2 table spoons of Italian dressing

Prepare the barbecue (medium-high heat).
Drizzle 3 tablespoons of olive oil over both sides of the mushrooms. Sprinkle the mushrooms with salt and pepper. Drizzle olive oil on the grill pan to prevent mushrooms from sticking. Grill until the mushrooms are heated through and tender (about 5 minutes per side).
Meanwhile, whisk the extra-virgin olive oil and garlic in a medium bowl to blend. Add the tomatoes, cheese and basil and toss to coat. Season the tomato salad to taste with salt and pepper.
Place your hot grilled mushrooms gill side up on plate. Sprinkle with more salt and pepper. Spoon the tomato salad atop the mushrooms, drizzle with Italian dressing to finish and serve.
